Alcohol Calculations for Passionfruit Wine 1004

Specific Gravity of the Juice = 1.020

SG 1.020 = 52g/ltr of sugar in the juice.

Target Alcohol = 11.8% needs 235g/l of total sugars.

Volume of juice = 4.5ltrs

Total sugars needed for 4.5ltrs = 4.5l x 235g/l = 1058g

Natural sugars = 52g x 4.5l = 234g

Sugar to add: 1058 – 234 = 824g of sugar.

Sugar was  inverted in 1ltr of juice then added to remainder of ‘must’ when cooled.

SG before secondary fermentation begins was 1.090 (11.8% alcohol when finished).
