Specific Gravity of the Juice = 1.004.

Target Alcohol is 13.2%  a good level for Table Wine.

From the Calculation Charts you can find the Sugar per Litre required to produce that percentage of alcohol.

The same chart will show you that the sugar in grams/litre for the juice with a Specific Gravity of 1.004 is 13g/ltr.

For each litre of Watermelon Juice the total amount of sugar that needs to be added is 262-13=249g/ltr.

We have 9ltrs of juice so we will need to add 249 x 9 = 2,241 grams of sugar or 2.241kg.

Since we added 500g of inverted sugar to the pieces of melon the total needed to be added at secondary fermentation is 2,241 – 500 = 1,741g 0r 1.75kg.

When the total sugar has been added to the must being prepared for the secondary fermenter use the Hydrometer to confirm the expected finished alcohol levels.

The picture showing the Hydrometer in the Watermelon must prior to secondary fermentation. The level is right on the line between table wine and desert wine which equates to 13.2% alcohol when fully fermented.
