Passionfruit Wine 1004 Update at 15days

The wine has been in the secondary fermenter now for ten days. Early rapid fermentation has slowed dramatically and there has been a large sediment deposited on the bottom of the fermenter. About 40mm depth. This was expected as the pulp cells and spent yeast settled due to the addition of the pectinase. I will upload some photos as soon as I have an opportunity to rack the wine and will also check progress with the Hydrometer. I expect to add more yeast nutrient to restart the stuck fermentation.
