Cream Puffs

  • 300ml water
  • 60g butter (unsalted)
  • 120g Self Raising Flour
  • 3 whole eggs
  • 300ml thickened cream for whipping
  • 1 tbsp caster sugar


  1. Combine water and butter and bring to the boil
  2. When boiling remove from heat then add flour gradually
  3. Leave to cool
  4. When cool beat in the eggs one at a time until you get a smooth mixture.
  5. Cook at 180-200C, 30-40 mins.
  6. When cooked leave in oven to completely dry out.
  7. Whip together the cream and caster sugar for filling.
  8. When ready to serve fill the puffs with cream
  9. Dust the tops with icing sugar to which has been added a little cornflour.
