Hot Water Pastry

This is a very simple all round pastry recipe first given to me by Leanne’s Mum, Val Chirgwin (1937-2008).

Ingredients

450g Self Raising Flour

160g Fairy Margarine

8 Tablespoons boiling water

8 Tablespoons Milk

Juice of 1 Lemon

Instructions

  1. Sift Flour
  2. Boil Margarine, Milk & Water together in a saucepan
  3. Once margarine is melted boil for 1 minute longer
  4. Add liquid to flour with lemon juice
  5. Knead mixture until just plastic.
  6. Use Self Raising Flour to flour table and rolling-pin
  7. Roll very thin, about 2mm then cut to shape
  8. Line pie tin with this pastry
  9. I (Adrian) use flaky or puff pastry for the top of the pie.
