Nut Loaf

Ingredients Step 1

  • 1 1/2 tbs butter
  • 3/4 cup Brown Sugar
  • 1 1/2 cups chopped seedless dates
  • 3/4 cup chopped walnuts
  • 1 1/2 tsp bicarbonate of soda
  • 1 1/2 cups boiling water

Ingredients Step 2

  • 1-2 eggs lightly beaten
  • 2 1/4 cups Self Raising Flour sifted

Method

  1. Put all ingredients for Step 1 in a bowl and cover with the boiling water.
  2. Let stand until cooled.
  3. Add eggs and SR flour and mix until even.
  4. Line 2 loaf tins OR 1 square cake tin with baking paper.
  5. Pour mixture evenly into tin or tins.
  6. Cook at 170-180 deg Celsius for 30-35 mins in 2 loaf tins.
  7. If using 200mm x 200mm baking tins cook for 45mins at 160-170.
